We made these lovely “FOR THE ANIMALS” cookies for our dear friend Amélia last weekend for her second birthday. They have her approval. And as you can see we had Sparky on quality control.
Ingredients:
1 cup of dates
2 cup of oats
1/2 cup of almonds
1 tbsp of agave syrup
1 tsp cinnamon
1/3 cup soy milk (or any other non dairy milk)
2 tbsp coconut oil
1/2 tsp yeast
Method:
Grind the dates, oats and almonds together. Add the cinnamon, mix it well together, then add the liquids. So, the milk and the oil. If you feel like the mixture is too runny, you can add a little flour, just see. You don’t have to do this. When you mixed everything well together, then place the mixture in a bowl and start shaping the cookies.
Meanwhile pre-heat the oven on 180 degrees.
When the cookies are good to go, bake for 20 minutes at 180.

What is really nice about this recipe is there is no sugar in it, just a little agave, the dates really are the sweetener in this, so many cookie recipes especially the old school ones are full of sugar and really in my opinion that’s the last thing kids need, they actually enjoy natural stuff just like we do. Give it a try with your little ones! Adults love them too!
