Apple/Berry Crumble with a yoghurt berry topping

So i have been really getting into the apple crumbles this week! I had to make one for a vegan cooking audition (i might reveal some more information about this soon) and then i made another one a gluten free version at OMASSIM GUESTHOUSE where i cook so now and then, so here we go.
Ingredients:
5 to 6 apples (its nice to use cooking apples, the green ones work the best) (peeled and cut into small to medium cubes)
2 cups of mixed berries (i used frozen ones, can be any mixed berries) (save 1 cup for the topping sauce)
1/4 cup of cinnamon
1 tbsp agave syrup
juice of one lemon
2 cups of rolled oats (i used gluten free ones)
1 1/2 cup of flour (wholemeal or rice flour, i used rice for the GF version)
1 cup of vegan margarine (i have tried replacing this with coconut oil, but when you do that, the oats don’t really become sticky enough in my opinion)
In a mixing bowl mix the oats, flour and vegan margarine, do this by hand and make sure they really stick together and become a nice melted mix together. Set aside.
Pre-heat the oven on 180 degrees celsius. Meanwhile peel and cut the apples, squeeze the lemon and prepare the berries. Place the apples in an oven dish first, then cover the apple with cinnamon and lemon juice (in general this is a good thing to do when you work with apples or pears as they go brown real quick) mix wel together, then add the berries and agave syrup, mix again.
Next step is to then get the oats/flour mixture to cover the apple and berries like a topping, fully spreading it over the top. Like this:
Place the oven dish in the oven for 45 minutes and you are ready to crumble! Well…. nearly i also made a topping to go with this, very yummy!
Topping:
1 cup of mixed berries
2 cups of soy yoghurt
1 cup of cashews (soaked for two hours)
1 tbsp agave
1 tbsp lemon juice
1/2 cup of water
Cook the berries together in a small pot, this way the berries become nice and thick, make sure you don’t leave them and are stirring the pot the whole time until the berries have become a nice, thick, smooth sauce, set aside. Then make the cashew cream, by putting the cashews, lemon, water and agave into a blender and blend that first when that is done you can place all other ingredients in a blender, blend together first, then add the berry sauce and you are good to go!
